Takikomi Gohan 炊き込みごはん(rice cooked with various ingredients)

Takikomi Gohan is a Japanese rice dish that you can easily prepare with various ingredients. While you can use a rice cooker, it's just as simple without one. This time, we'll introduce a basic recipe for Chicken Takikomi Gohan.


Ingredients: Everything you can find in supermarket.

  • 300g uncooked Japanese short-grain white rice
  • 350ml water
  • 2tbsp soy sauce
  • 2tbsp mirin
  • 2tbsp sake
  • 1tbsp Kombu powder
  • 1 tbsp salt
  • 10cm Leek or 1-2 Spring onions
  • 3 Mushrooms
  • 1 Carrot
  • 5-10 Field peas or Green peas
  • 100-200g Chicken
  • 1tbsp Kombu powder


1. Wash rice in a pot. Gently wash the rice in a circular motion, add water, and discard it. Repeat this process about 3–4 times.

2. Let the rice soak in 350ml water for 30min.

3. Cut the Vegetables.

4. Marinate the chicken with Kombu powder

5. Add all sauce ingredients, Kombu Powder and salt.

6.Add all the prepared vegetables and chicken.

7. Put the lid on and start cooking over high heat. When it starts boiling, turn the heat to low. Cook for a total of 10 minutes.

8. Increase the heat for a few minutes again, then turn it off. Let it steam under the lid for 15 minutes.

9. Open the lid and mix the ingredients.

10. Done! You can add sesame seeds on top.
