Okara Tsukemono Pickles

Tsukemono are traditional Japanese pickles made from various vegetables like cucumbers, radishes, and carrots. They are seasoned with salt, vinegar, or a combination of both, and are served as a side dish to complement meals. Introducing okara tsukemono, where okara powder adds a unique flavor and texture to the pickles, making them even more delicious and nutritious.

Ingredients(for approximately 10 batches): 

  • Vegetables(Cucumbers, carrots, Chinese cabbage, radishes)

Feel free to adjust the amounts of salt, sugar, and kombu powder according to your taste preferences. Enjoy your homemade okara tsukemono!


1. Cut the cucumber.

2. In a bowl, soak 30g okara powder, sugar and salt in 100ml of water.


3. Add kombu powder to the mixture and transfer it to a jar.


4. Take 1 tablespoon of the mixture (from step 3) and add it to the chopped cucumber in the bowl.

5. Mix well and let it sit for at least 4 hours. Your okara tsukemono will be ready!

You can use the same method with various vegetables to make different types of tsukemono.
