Oden おでん

Oden (おでん) is a stew featuring a rich broth and a variety of ingredients. Finding all the traditional components in Europe can be challenging, so we're introducing an Oden recipe with ingredients readily available in supermarkets.

Ingredients: 

Soup

  • 1liter water
  • 2tbsp soy sauce
  • 2tbsp mirin
  • 2tbsp sake
  • 1tbsp Kombu powder
  • 1tbsp salt

Others

  • 10cm Leek or 1-2 Spring onion
  • 5 Onion
  • 5 Carrot
  • 1/2 Chinese cabbage
  • 5-10 Field peas or Green peas
  • 7 Boiled egg
  • 500g Beef
  • 250g Pork mince
  • Sausage
  • Surimi
  • 1tbsp Kombu powder

 

Instructions

1. Cut the vegetables.

  • Onion: Peel and make a cut at the bottom.
  • Carrot: Peel and either leave whole or slice according to your preference.
  • Chinese cabbage: Cut as desired.
  • Leek: Cut into 5-10cm pieces.

 

2. Making pork meat ball.

  1. Chop the green part of the leek.
  2. Mix it with pork mince and kombu powder.
  3. Shape the mixture into balls.

 

3. Boil beef

Put the beef in boiling water to make the broth clear. After 5-10 minutes, take out the beef and rinse it with clean water.

4. Making soup

Boil water, then add soup ingredients like soy sauce, kombu, and more.

5. Put beef, onion, carrot, and egg first. Cook for around 10 minutes over medium-low heat.

6. Remove carrot, onion, and egg from the pot. Then add meatballs and leek, and cook for 5 minutes.

7. Remove meatballs and leek. Then add Chinese cabbage and sausage, and cook for 5 minutes.

8. Put all ingredients back and add peas and surimi.

9. Cook over low heat for 10 minutes and turn off the heat.

10. Keep it in the soup with the lid on for more than 30 minutes.

11. Done! Enjoy. After eating, you can add other ingredients and cook again. If the soup taste is not strong enough, you can add more kombu or salt.

 

In Japan, we use konjac, daikon radish, and fish cake for Oden. However, you can add any vegetables you like, such as potato, tomato, and more. The possibilities are endless! We'll introduce another style next time. Please feel free to share your ideas too.
